Today we’d like to introduce you to Carlos Lopez.
carlos, we appreciate you taking the time to share your story with us today. Where does your story begin?
My story starts in a kitchen, washing dishes. I got my first job in food service in high school, and instead of leaving it behind for something else, I stuck with it, working my way up through multiple restaurants all through high school and college. I learned the business hands-on, under an owner who let me see what it actually took to run a restaurant, not just work in one.
That experience, combined with my Dominican roots, is where Tropical Juice Bar came from. I grew up around the flavors, the ingredients, and the pride that goes into real, made-from-scratch food, and we saw an opportunity in New Jersey for a fast-casual concept that didn’t cut corners: fresh smoothies and juices, made-to-order empanadas, Caribbean dishes like the Patacon and tostones, all real ingredients, no shortcuts.
we opened the first location in 2010. Once the model proved itself, I reinvested everything back into the business rather than take it slow, and that’s how we grew to 10 locations across New Jersey today, with an 11th underway as our third franchise.
Right now my focus has shifted. It’s less about opening the next store and more about building the systems and the leadership pipeline so the business can keep growing without me being the bottleneck.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
It hasn’t been smooth, no. In the early days, it was me, my business partners, and a few key family members who stepped in to help. We were doing everything ourselves: cooking, running the register, cleaning, managing, all of it. There was no outside team to lean on yet, so the hours were long and there was no room for a bad day. But having people I trusted in it with me from the start made a real difference.
As we grew from one location to ten, the challenge shifted. It stopped being about doing everything ourselves and became about doing everything the same way at every location. Consistency is the hardest thing to scale in this business. What works when you’re standing in the kitchen yourself doesn’t automatically work when you’re not there.
The moment that really tested us came in 2017. We lost our commissary cook, someone who was central to keeping our food consistent across the business, and at the time we didn’t have the systems in place to replace her easily. I stepped back into the kitchen myself to cover the gap while we figured it out.
That was the wake-up call. It taught me that a business can’t depend on any one person, no matter how good they are. Since then, we’ve been deliberate about building real systems and backups, so no single person leaving can put the business at risk again. It’s actually part of why developing people into managers, not just relying on whoever’s strongest at the moment, is one of our biggest priorities today.
Alright, so let’s switch gears a bit and talk business. What should we know?
Tropical Juice Bar is a fresh-food QSR rooted in real, made-to-order Caribbean and Dominican flavors. We serve smoothies and juices, empanadas, meal replacements, detox/cleanse options, wraps and quesadillas, and Island favorites like mofongo, tostones, and Patacon (plantain sandwich), all made fresh daily with real ingredients, not shortcuts. We’re not just a juice bar; the menu is broad enough to be someone’s actual meal, not just a drink stop.
What sets us apart is that combination: the discipline of fresh, made-in-front-of-you food, paired with a menu wide enough to cover breakfast, lunch, dinner, and everything in between. A lot of “healthy” concepts narrow down to smoothies alone. We didn’t want to be that. We wanted real Caribbean cooking done the right way, at QSR speed.
We’re at 10 locations across New Jersey today, and what I’m proudest of brand-wise is our first franchise, which opened in Hackensack three years ago. That was the moment someone outside my own family put their money behind our systems and said, we believe this works even without you standing in the kitchen. We now have our third franchise location underway in South Orange, which tells me we built something repeatable, not just something that only works because I’m there.
We also offer Juicy Rewards, our loyalty program, because retention matters as much as new customers walking in the door, and we cater through EZCater for anyone who wants Tropical Juice Bar at their next event.
What I want readers to know most: this brand grew out of a kitchen, not a boardroom, and every location still runs on that same standard.
Do you have any memories from childhood that you can share with us?
My favorite childhood memory goes straight back to where this whole thing probably started, even though I didn’t know it at the time. I was about seven years old, and we had a big mango tree in the backyard. When the mangoes ripened, my mom would pick them and make juice right there at home, using a manual blender, (a molinillo), nothing electric, just her hands doing the work.
Mango has been my favorite fruit ever since. There’s something about that memory, watching real, ripe fruit turned into something simple and good with your own hands, that I think about every time I walk into one of our locations. It’s the same idea, just at a bigger scale now: real fruit, made fresh, no shortcuts.
